Baked Beans Cooked in Slow Cooker

Baked Beans Cooked in Slow Cooker

Ingredients
1 lb dried navy or pea beans
5 cups cold water
1 medium onions, sliced
1 tablespoon maple syrup or brown sugar
1 teaspoon dry mustard or one teaspoon prepared mustard
1/4 cup molasses
1/2 cup tomato ketchup
1 teaspoon salt
1/4 cup black pepper

Slow cooker instructions
Sort and rinse beans. Place beans in non metallic bowl, add enough cold water to about 1/2" above beans. Soak beans overnight. Drain beans from bowl.
In large pot add beans and 5 cups of cold water, cover and heat to boiling then simmer 30 to 45 minutes until beans are nearly tender. Beans will not turn softer once placed in slow cooker. Drains beans from pot.
Place onion slices on bottom of slow cooker. Add drained beans. In small bowl mix remaining ingredients. Add mixture in centre of beans in slow cooker.  Add water to cover beans, pouring water in centre of pot over mixture and beans, no need to stir. Cover, and cook on low for 8 to 10 hours. Add water as required to keep beans covered. Beans will become tender.
At end of cooking, stir gently, remove 1 cup of tender beans and mash. Stir mashed beans gently back into remaining beans until well mixed. Cover, cook on high for 30 minutes.

Oven baked instructions
Sort and rinse beans. Place beans in non metallic bowl, add enough cold water to about 1/2" above beans. Soak beans overnight. Drain beans. In large pot add beans and 5 cups of cold water, cover and heat to boiling then simmer 30 to 45 minutes until beans are nearly tender. Beans will not turn softer once placed in oven. Drains beans.
Place onion slices on bottom of pot. Add beans. In small bowl mix remaining ingredients. Add mixture and water to cover beans, stir gently. Cover, and cook at 250 F for 7 hours. Add water as required to keep beans covered. When beans are tender, remove 1 cup of beans and mash. Stir mashed beans gently back into remaining beans. Cover and continue to cook.
At the end of 6 hours or one hour before serving, remove cover and continue to bake.

Hint: Onions can be strong in flavor, adjust amount accordingly.
Salt and pepper to taste after cooking.
Serve with ketchup or mustard.
