Rice Crispy Cereal Rolls

Rice Crispy Cereal Rolls

Ingredients
1/4 cup butter
80 large marshmallows divided for rice crispy cereal mixture and inside rolls.
1 to 2 tsp. vanilla
6 cups rice crispy cereal, such as Rice Krispies

Instructions
Read all instructions and measure all your ingredients before proceeding.
Line a cookie sheet with parchment paper, set aside.
In a large pot, melt 1/4 cup butter and 40 large marshmallows over low to medium heat. Stir continuously. Remove marshmallow mixture from heat and stir in vanilla.
Stir in a cup of rice crispy cereal at a time, stirring until cereal is covered in marshmallow mixture.
Immediately place cereal mixture on a cookie sheet lined with parchment paper. Flatten mixture with a spatula and divide cereal mixture in half using dull knife if needed.
Place 20 marshmallows in a line about 1 inch from edge, on top of both halves of the cereal mixture.
Roll each half like a jelly roll, marshmallows will be in the middle.
Makes two marshmallow rolls.
Place roll on a cutting board and slice in 1 inch slices. Repeat with other roll.
Freezes well.

Variation:
Use large colored marshmallows instead of white marshmallows in the centre.

Hints:
Freezes well, separate the layers with parchment paper or plastic before freezing. if placing in the freezer or plastic container.
If you lose this recipe, look on the rice Krispies box.
Do not double the recipe.
Does not work as well with small marshmallows.
Laying out the marshmallows on top.
