New Year Cake

Serves 8 to 10
For good luck to the person who finds it add coin wrapped in foil before baking.

New Year Cake

Ingredients

2 1/2 cups flour
2 tsp. baking powder
1/2 cup ground almonds
1 cup margarine or butter, softened
3/4 cup white sugar
4 eggs
2/3 cup fresh orange juice
1/4 to 1/2 cup sliced almonds

Instructions
Preheat oven to 350 or 325 for glass cake pan.
Line bottom and sides of a 9 in square cake pan with parchment paper, apply grease on bottom and side of parchment paper.

In a large bowl add flour, baking powder and ground almonds. Stir with large spoon and set aside.
In large mixing bowl add butter and sugar and cream with electric mixer until light and fluffy. Beat in eggs one at a time.
Alternatively add flour mixture and orange juice until evenly combined.

In bottom of prepared cake pan add coin wrapped in foil if using. Spoon cake mixture into prepared pan and smooth cake surface. Arrange almonds on top. Bake in the center of oven for 50 to 55 minutes and until toothpick inserted into centre of cake comes out clean.
Cool cake in pan for 5 minutes then remove from pan and place on wire rack. Peel off parchment paper and leave cake to cool completely before serving.

New Year Cake keeps a few days in the refrigerator or longer in the freezer.

Ground Almonds Recipe
2/3 sliced almonds will make approximately 1/2 cup ground almonds

Use grounder, such as coffee grounder. Clean coffee grounder, make sure there is no coffee residue. Add almonds and ground to a medium to fine texture.
