Serves 2-3
A delicious dish for leftover beef.
1-2 tablespoons olive oil
1/2 red onion, diced
1 celery stalk, diced
Pinch of salt
1 red pepper, chopped
1/2 tsp garam masala
2 tsp sumac
4 large mushrooms, sliced
2 cloves garlic, minced
Generous splash of red wine
1 tomato, diced and mixed a pinch of salt and sugar
or 2 tablespoons or more prepared sauce
1-2 cups cooked leftover beef, chopped
2 or more cups cooked colourful pasta
1/2 cup grated cheese, optional
Instructions
In a cast iron frying pan or similar heavy pan heat 1-2 tablespoons olive oil on medium heat. Add onion and celery with a pinch of salt to pan. Cook onion and celery until soft. Add red pepper to pan and cook 2 minutes. Stir in garam masala and sumac. Add an additional tablespoon of olive oil, mushrooms and garlic to pan. Deglaze pan with wine, using just enough wine to remove any small brown bits in pan and dissolve bits into wine. Stir in tomato. Stir in beef. Sir in pasta. Cook until mixture starts to simmer.
Cover reduce heat to low and cook an additional 10 minutes until meat and pasta are heated through, stirring occasionally. Stir in cheese and serve immediately.
Variations:
Substitute sumac with 1 tsp smoked paprika.
Use any vegetables you have on hand.
