German Potato Salad

German Potato Salad

Ingredients
1 1/2 lb small potatoes, unpeeled, cut in half
2 celery sticks, diced
1/4 each green and red pepper, diced
1/2 large Vidalia onion, diced
1 tablespoon chopped fresh parsley or 1/4 tsp dried parsley

Dressing
1/4 cup vinegar
1/4 oil
1 tsp. Dijon mustard
Salt and pepper to taste

Instructions
Cook unpeeled potatoes in a covered saucepan until tender. Remove from heat, drain, cool slightly.
In large bowl add cooked potatoes, celery, peppers, onion and parsley.
Dressing: In a jar combine vinegar, oil mustard, salt and pepper.
Add dressing to vegetables, stir gently and serve warm or cold.
