Celery Remoulade

Serve this salad on a leaf of lettuce or endive as an appetizer or side salad.

Celery Remoulade / Salade de céleri rave

Ingredients
1 large celery root
1/2 lemon juice
1 cup water

Dressing
1/2 cup mayonnaise
1 tablespoon mustard
1 tablespoon horseradish
2 tablespoon wine vinegar
1 tablespoon chopped capers
1/2 red onion, chopped
1 small mild pepper, chopped

Instructions

Grate celery root over bowl with water and lemon juice - this prevents oxidization.
Mix well all ingredients for dressing.
Drain excess liquid from celery root.
Mix dressing ingredients in small bowl. Add dressing to celery root and mix well.
Taste and adjust seasoning as needed.
Refrigerate for at least one hour before serving.

Note: you can grate the celery root in a food processor and just add juice of half a lemon immediately after.
