Tzatziki

Ingredients
1 English cucumber peeled,  grated and drained
1 cup Greek yogurt
Juice of 1/2 lemon
2 cloves garlic, pressed
Salt and pepper to taste

Instructions
Mix all ingredients and refrigerate for 6 to 48 hours.
Serve with raw vegetables (crudites) or pitas bread.

Note: Drain juice from cucumber by squeezing through a clean cloth a couple of times.
