Makes 2 dozens
Gil
1/3 cup butter
1/3 cup coconut oil
1/3 cup sugar
1/3 cup maple syrup
1 tsp vanilla
1/2 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
1/3 cup shredded coconut
3/4 cup whole wheat flour
3/4 cup of oatmeal
1/3 cup of raisins or chopped dates
1/2 cup of chopped walnuts or pecans
Instructions
Mix together butter, oil, sugar and maple syrup. Add baking soda, salt and cinnamon. Add coconut, flour, oatmeal, raisins and walnuts. Drop on greased cookie sheet.
Bake at 360 F for 10 -12 minutes. Cool 5 min in pan. Remove.
