We make these kabobs with beef but sometimes we use just vegetable chunks. You don't need to marinade the vegetables, just set aside some teriyaki sauce to baste the vegetables while grilling.
Ingredients
1 1/2 lb beef cut in 1 1/2 inch cubes
4 or more cups vegetables cut into chucks: Onion chunks, mushrooms, red and green pepper, cherry tomatoes and zucchini.
Teriyaki Marinade:
The measurements listed below are approximate.
1/2 cup Soya sauce
1/4 cup brown sugar
Garlic, fresh crushed
Onions, finely diced
Bit of vinegar
2-3 tablespoons Olive oil
8 wooden skewers
Instructions
1. Mix marinade in a small bowl, set a bit of sauce aside for basting. In a Ziploc bag add rest of sauce and beef meat cubes and marinade for a few hours.
2. Soak wooden skewers in water 10 minutes. Place vegetables and meat on skewers.
3. Cook on preheated grill, turning frequently. Using reserved sauce baste often while cooking. Cook until meat is done, 15-20 minutes.
Variations:
If you are short of vegetables use potatoes or carrot chunks. These need to be cooked for about 3 minutes in hot water before putting on skewers.
Canned whole mushrooms are also very good.
You can use a VH teriyaki sauce or other marinade sauce.
