Carrot Coconut Soup

Serves 8
This is a protein rich pureed soup meant to keep you going all day. Also good for older or sick people who don't absorb protein easily. Recipe is made up from a bunch recipes, ingredients in my cupboards like ginger, carrots and coconut milk.

Ingredients
2 lbs carrots, coarsely chopped 
2 large onions, coarsely chopped
5 garlic cloves, whole
1/2 lb small mushrooms, chopped
6 cups broth
1/2 to 2 tablespoon Soup Spice Mix, recipe to follow
Proteins:
1/4 cup tahini or sesame butter
1 can whole coconut milk
1/4 cup almond butter or any nut butter
1/2 cup soft goat cheese or cream cheese

Instructions
In large pot add carrots, onions, garlic, mushrooms and broth. Bring to boil, then reduce to simmer. 
Meanwhile prepare the Soup Spice Mix.
Once the carrots are cooked, puree in blender, mixer or hand blender.
Return soup to pot.  Add half of spice mix to soup, taste and adjust seasonings if needed. 
Stir proteins into soup and mix well to dissolve. Simmer on low for 30 minutes or more until proteins are dissolved.
If too watery add more carrots.
If too spicy add more protein such as sour cream, goat cheese or cream cheese and simmer another 10 minutes.
Adjust seasoning at the end of cooking.
Freezes well.

Soup Spice Mix Recipe
Adjust ingredients per taste

1 tablespoon cumin
1 tablespoon mustard seeds
1 tablespoon mustard powder
1 tablespoon cinnamon
1 tablespoon nutmeg
1 tablespoon chili powder
Or 1 tablespoon red pepper flakes
1 tablespoon ginger powder
3 ground cloves

Soup Spice Mix instructions
Mix ingredients in small bowl. 
Keep the leftover mix in labelled mason jar. 
Makes 1/2 cup approximately.
