Makes 6 to 8 regular jam jars
Easiest recipe. Really nice on toast, dry bread with yogurt.

3 kg oranges, mandarins
1 cinnamon stick, optional
1 kg white sugar
Instructions
Wash and scrub oranges in warm water. Cut in thin slices with peels. Cut a few mandarins without peel. Add mandarins to large pot, and cook over medium heat. Add cinnamon stick. When the fruit starts to boil, start adding adding sugar a bit at a time.
Simner for 3 hours without lid. Keep to just boiling point. Stir often but slowly. Make sure marmalade doesn't stick to the pot.
Keep cooking until you get a nice think consistency.Remove cinnamon stick.
Put marmalade in sterilized jars and cool completely before putting lids on jars.
Hints
The more sugar you add, the longer the marmalade will keep. I keep my marmalade in the fridge, so I use 600 kg per 3 kg of mandarins.
I let the jars cool overnight on the counter to make sure it's cool completely before sealing the jars.
Try marmalade on chicken breast with a bit of white wine or chicken broth for the sauce. Add yogurt or cream to chicken just before serving with white rice and broccoli.
