Pick your choice of vegetables suitable for stir frying, you can use frozen vegetables.

Ingredients
1 potato, peeled and cubed
1 sweet potato, peeled and cubed
1 green bell pepper, chopped
1 red bell pepper, chopped
1/2 red onions, chopped
1 medium broccoli head, cut into florets
2 to 3 slices lemon
6 to 7 garlic cloves
2 tsp paprika
1 tablespoon cumin powder
1 taboespoon coriander powder
1 tsp turmeric
1 tsp cinnamon
1 tablespoon crushed black pepper
Salt to taste
2 tablespoon olive oil
Instructions
Preheat oven to 400 F. Prepare vegetables. Combine spices and olive oil in large bowl, add vegetables and mix spices with vegetables. Place vegetables on baking sheet. Bake 30 minutes, turn vegetables and bake another 20 minutes.
