This is a no fuss recipe, substitute vegetables with what you have available.

Quick Instant Pot Vegetable Soup |
Ingredients
1 900 ml box chicken or vegetable broth
1 large can diced tomatoes, 28 oz
1 cup water
1/2 mild onion, diced
2 carrots, diced
2 stalks celery, diced
1/2 cup green beans, chopped
1 large potato, diced
1 small butternut squash, diced
1/2 cup frozen corn
1/2 cup frozen peas
1/2 uncooked rice or pasta
salt and pepper to taste
2 tsp Cajun seasoning
Instructions
In Instant Pot add broth, diced tomatoes with juice, water, onion, carrots, celery, green beans, potato, butternut squash, corn, peas, and rice or pasta. Stir. Season with salt, pepper and Cajun seasoning, lightly stir. Add more water if required, rice or pasta will expand.
Place lid on. Set Instant Pot to soup, 20 minutes. Let sit at least 5 minutes before depressurizing.
Serve with crackers and cheese.
Hint: Use different seasoning, such as creole seasoning mix, or make your own with 2 tsp dried parsley, 2 Bay leaves and 1/2 tsp thyme.
Instead of an Instant Pot, place all ingredients in large pot with lid. Cover, bring to a boil and simmer for 20 minutes or until ingredients are soft. Sir occasionally.
