Pan Pork Chops

Serves 4
A great way to sear pork chops. An alternative spice rub at end of recipe.

Ingredients 
1 tablespoon olive oil
4 pork chops, about 1-inch thick
Medium pan with lid
Serving plate with cover or bowl with lid

Spice rub
1 tablespoon flour, optional
3-4 tsp curry powder
1 1/2  tsp turmeric
2  tsp cayenne pepper
1 tsp salt
1 1/2 tsp pepper

10 mushrooms, sliced
4 cloves garlic, minced

Sauce
1 cup chicken broth or wine
1 tablespoon apple cider vinegar
2 tsps honey or brown sugar, optional
1 tablespoon cream or coconut cream or butter
2 tablespoons  fresh parsley, chopped, optional

Directions
Spice Rub
In a small bowl add flour, curry powder, turmeric, cayenne pepper, salt and pepper. Mix well.  Rub both sides of the chops with the spice rub.

In medium pan add one tablespoon olive oil  and preheat on medium-high heat. Add pork chops to hot oil. Cook 2 to 3 minutes, until golden brown.  This will sear the pork chops.

Using kitchen tongs to hold pork chop,  brown fat on sides of pork chops for 30 seconds or until sides are lightly browned. Flip pork chops, uncooked portion down.  Turn heat to low, cover and cook 6 to 12 minutes until cooked,  145 F. Check internal temperature after 5 minutes, then check temperature every couple of minutes. Pork chops are cooked when internal temperature reaches 145 F or juices run clear when you make a cut in centre of chop.

Remove chops from pan and keep warm in a serving plate with cover or serving bowl with lid.

Sauce
After cooking pork chops make sauce in same pan.
In the medium pan used to cook pork chops, preheat pan to medium heat, add mushrooms and cook until mushrooms are soft, about 2 minutes. Add garlic and cook one more minute.

Immediately add chicken broth or wine, vinegar and honey to mushrooms. Keep heat to medium-high heat. Scrape bottom of pan with wooden spoon and stir to loosen bottom of pan residue. When bottom of pan is scraped clean and broth is boiling, reduce heat and simmer until liquid is reduced by half about 6-8 minutes. Taste and adjust flavor. Remove from heat and add cream or butter, stir until well combined.

Return pork chops to pan, spoon sauce on top. Add parsley if using.  Serve warm.

1 tablespoon all-purpose flour
1 tsp. chili powder
1 tsp garlic powder and/or 1 tsp. onion powder
1/2 tsp paprika
