Great recipe when Pomegranates are in season.

Ingredients
1 small white cabbage shredded or 4 cups shredded cabbage
1 tsp salt
1/4 cup vinegar
1 seeded pomegranate or 2/3 cup pomegranate seeds
1/4 cup olive oil
Salt to taste
1 tablespoon vinegar, or to taste
Instructions
Marinate shredded cabbage in salt and vinegar for 30 minutes at room temperature or at least 2 hours in the refrigerator.
Rinse cabbage lightly.
Place pomegranate in a large bowl and add cabbage. Slowly add olive oil, only add enough to cover cabbage and pomegranate. Stir gently and taste. If needed add salt and vinegar to taste.
