Lentil Stew in Slow Cooker

Serves 4

Ingredients
3 tablespoons butter
1 large onion, diced
1/2 tsp salt
1/4 tsp pepper
1 carrot, diced
3 cloves garlic, minced
1 tablespoons ginger root, minced
1 tsp turmeric powder
1/2 tsp curry powder 
1/2 tsp cardamom
1/4 tsp ground cloves
1/4 tsp cinnamon
1 1/2 cups green lentils
1 quart or 4 cups chicken broth

Instructions
In frying pan, heat butter on medium heat. Bring to sizzle then add onion, salt and pepper. Sauteé for about 4 minutes, stirring frequently. Add carrots and continue cooking for about 5 minutes.  Add garlic, ginger and ground spices. Saute, stirring constantly for about 1 minute using wooden spoon.  Add vegetables, lentils and broth to slow cooker. Stir and cook for 6 to 7 hours. Serve warm.
