Bikie Bites


An Aussie Bites variation using the food processor, great to bring along on an outing instead of granolar bars. Bring them along a bike ride.

Bikie Bites


Ingredients
1 3/4 cup large flakes oatmeal, seperated
2 tablespoon granulated sugar
1/4 tsp baking soda
1/4 cup cooked quinoa or 2 tbsp uncooked quinoa
1/4 cup dried apricots, packed in measuring cup to measure, chopped
1/4 cup raisins, chopped
1/4 cup ground flaxseed
1/4 cup unsweetened shredded coconut
1/3 cup unsalted sunflower seeds
1/4 cup  walnuts, chopped
1/3 cup pecans, chopped
1 tablespoon chia seeds

2 tablespoons honey
1/4 cup unsalted butter, melted; or coconut oil
1/4 cup canola oil
1/2 tsp vanilla

Instructions
Preheat oven to 350 F.  Grease 24 cup mini muffin pan.
Blend 1 cup of large flakes oatmeal in food processor for about 1 minute until oatmeal is  a fine flour. Flour will be fine, but still have with some grains.
Add remaining dry ingredients; 3/4 cup rolled oats, sugar, baking soda, quinoa, chopped dried apricots, chopped raisins, flax seed, cocunut, sunflower seeds, walnuts, pecans and chia seeds. Pulse until apricots, raisins and nuts are in tiny pieces.
Add honey, melted butter, canola oil and vanilla to blender. Pulse only until ingredients are combined.
Drop batter into prepared muffin pan using a tablespoon or 1 1/2 tablespoon measurement.  Divide batter evenly,  about 1 1/2 tablespoon rounded of batter.
Bake in preheated oven for 10 to 12 minutes. Tops will be slitghtly golden brown.
Remove pan from oven and place pan on a wire cooling rack to cool bites.
Remove bites from pan when cooled and store in fridge or freezer.
