Cabbage Soup

Delicious with or without meat. This soup has no taste without the herbs. No need for salt.

Cabbage Soup


Ingredients
Oil
2 onions, chopped
4 stocks of celery, diced
4 cups chopped green cabbage
4 carrots, diced
3 cloves of garlic
1/2 tsp each cinnamon, thyme, sweet basil, crushed rosemary, cumin, turmeric, black pepper.
Optional, 1 cup cooked ham or cooked sausage meat, cut in cubes
4 cups vegetable broth
1 can tomatoes, diced
1 small can tomato paste
1 cup water, if needed

Instructions
In large pot, heat oil then add onions and celery. 
Cook 2 minutes then add cabbage and carrots.
Cook 2 more minutes mixing well. 
Add garlic, herbs and meat, stir. Add broth, tomatoes and tomato paste.
Add water if needed to cover vegetables.
Bring to a boil.
Mix and boil for 3 minutes. Cover, shut off heat and leave on burner for 40 minutes or simmer until vegetables are cooked.
Taste broth, adjust seasoning if needed.
