Flattened Turkey |
Also called spatchcocking or butterflying this cooks a lot quicker and the result is juicy crispy turkey.
Ingredients
1 4-5 kg turkey, thawed in fridge
3 carrots
2 onions
1 head of garlic
3 apples
Cinnamon, cayenne, tarragon, salt, pepper.
Oil
Wrap a few potatoes in foil and but in oven to cook at same time as turkey.
Instructions
Peel and cut in large chunks carrots and onions.
Peel garlic and leave uncut
Quarter and core apples
Cut out turkey back bone by cutting on each side with sharp kitchen knife. Use a meat clever for stubborn bones. Break chicken breast with two sharp hits with a meat clever on top.
Rinse and pat dry turkey.
Lightly oil bottom of large baking pan
Add apples, a few onions and carrots in a small mount in center of roasting pan. Sprinkle with cinnamon and cayenne.
Put turkey on top of apples, fold wings over breast and legs at the bottom.
Add garlic between wings and breast and thighs and breast.
Add onions and carrots around turkey.
Brush oil on top.
Add tarragon, salt and pepper
Cook at 425 for 1 hour or until cooked.
Baste every 20 minutes.
Cover and let rest for 10 minutes before serving.
Gravy
1/2 cup of flour
1 1/2 juice from turkey
1 1/2 chicken broth
Heat flour to a yellow color
Add juice from turkey and then broth 1/2 cup at a time while stirring until you have desired consistency.
