Broccoli Pasta

Broccoli Pasta


Ingredients 
1 large head of fresh broccoli 
300 grams Spaghetti, 2 servings 
2 cloves Garlic, minced or crushed 
Extra virgin olive oil 
Salt to taste 
Pepper to taste 
6 to 12 tablespoons grated Pecorino, Romano or parmesan cheese for topping

Instructions 
Trim the end of the broccoli. Cut the rest of the stem in small pieces and trim the florets.

In large pot add 5L water and salt and bring to boil. Add broccoli to boiling water and leave to cook for 5 minutes or until soft. Strain broccoli. 

Meanwhile, in medium frying pan, add generous amount of olive oil and preheat pan on low heat. Add garlic to pan and simmer. Once the garlic starts to brown, add 1-2 tablespoons water to prevent garlic from burning. 

Add strained broccoli to garlic and simmer on low heat. Some broccoli will be crushed and some in full pieces. Add salt and generous amount of pepper. 

Cook spaghetti according to package instructions. Save 1/2 cup of pasta water. Strain pasta. Gently stir in pasta and pasta water to broccoli. Add grated cheese and stir gently, keeping some broccoli pieces intact.

Serve hot.
