This soup is easy to make. Fresh spices from the garden is always appreciated.

Ingredients
100 to 150 grams rice noodles, approximately 1/2 package
1/2 lb or 225 g cooked ground beef
2-4 tablespoons onion or 2 green onions , diced
1 small jalapeno pepper or any small hot pepper, diced
2 tsp of olive oil
1 box, 900 mL Pho Broth
2 cups bean sprouts, rinsed, optional
2 fresh springs or 1/2 tsp dried basil
2 fresh springs or 1/2 tsp dried cilantro
2 fresh springs or 1/2 tsp dried mint leaves
1/4 teaspoon each of salt and pepper ( salt is optional)
Instructions
You need a small pot, frying pan and large pot.
Cook noodles according to instructions in small pot.
In small frying pan cook ground beef until no longer pink, drain fat.
In large pot, preheat olive oil. Add onions and hot peppers, cook a couple of minutes, until onions are translucent. Add cooked beef to pot. Add broth, bean sprouts, herbs, salt, pepper and cooked noodles. Bring to a boil, simmer 4 -5 minutes. Serve.
Note: Green onions can added at the same time as herbs instead of cooking them in oil.
Hint: I use dry herbs from the garden. I substitute 1/2 tsp of cilantro for a tablespoon of loose cilantro leaves and rub the leaves in my hands to break them up, the herb doesn't need to be extra fine.
