French Coconut Pie

Ingredients

1 9" pie shell, unbaked
1/2 cup shredded coconut
3 tablespoons butter, melted
2 eggs
1/2 tsp vanilla
1/2 cup milk
l cup brown sugar
2 tablespoons flour, see hint below

Instructions
Preheat oven to 450 F. Add coconut to bottom of unbaked pie shell. Mix remainder of ingredients and pour on top of coconut. Bake at 450 F for 8 minutes and then lower the temperature to 350 F and cook another 35-40 minutes or until golden brown.

Hint: replace the flour with 1/4 cup of maple syrup or corn syrup.
