Delicious chicken dish. Serve with green beans and rice.
Ginger Garlic Marinated Chicken |
Ingredients
4-6 chicken pieces
Marinate
2 tsp Tumeric
2 tsp Herbs de Provence
1/4 tsp Cayenne pepper
1 tsp Paprika
2 tablespoons Fresh ginger, minced
2 garlic cloves, minced
1-2 tablespoons Oil
2-4 Carrots, sliced
2-3 Sweet Potatoes, diced
1 garlic cloves, chopped
2 tablespoons fresh coriander, chopped
Instructions
Mix Marinate ingredients. Place chicken in marinate pan and pour marinate over chicken. Place in refrigerator.
Marinate chicken for a few hours. Four hours of marinating is good.
In a large skillet cook carrots and sweet potatoes with one garlic clove for 5-8 minutes.
Remove vegetables and set aside. Add chicken and marinate to pan. Bring to boil.
Simmer chicken for about 30 minutes until cooked.
Add carrots and sweet potatoes to chicken.
Cook over low heat for an additional 15 minutes, until chicken is tender. Add coriander just before serving.
