Mango Chicken

Serves 4
Easy recipe that is delicious.
Start with cooking rice of choice in seperate pot. Goes well with a variety of vegetables.

Mango Chicken 


Ingredients 
2 chicken breast, cut in bite size pieces
1 tablespoon vegetable bouillon 
1 cup water
1 red pepper, chopped 
1 mango, chopped 
1/2 tsp parsley
1/4 tsp red pepper flakes
Salt to taste
2 tablespoons Spicy Thai Sauce

Vegetables, i.e yellow and green beans

Instructions 
In preheated frying pan drizzled with olive oil add chicken breast pieces. Fry until chicken is cooked.
Add vegetable bouillon and water. Simmer gently. Meanwhile cut red pepper and mango. Add red pepper and mango to chicken, stir. Add parsley, red pepper flakes  and salt and stir. Add Spicy Thai spicy sauce for colouring. Meanwhile cook vegetables.  Simmer gently until vegetables are cooked. Serve over cooked rice.
