Instant Pot Chicken and Vegetables

Great family recipe. This recipe is similar to a chicken pot pie without the crust.

Instant Pot Chicken and Vegetables

Ingredients
1-2 lbs boneless chicken breast cut in 1 inch cubes, 2-4 large breast
2-4 large carrots, chopped
2 stalks celery, diced
2-4 russet potatoes, cut in 1 to 1.5 cubes, 4 or more cups diced potatoes
1/2 cup frozen peas or one small can of peas
4 cups or more chicken broth. You need enough broth/water to cover ingredients in instant pot
2-3 tps Worcestershire sauce
1/2 tsp salt
1/2 tsp thyme or 1 tablespoon fresh thyme
1/4 tsp garlic powder or 2 garlic gloves, minced
1/4 tsp ground sage, or 3 fesh leaves minced
1/4 tsp parsley, optional
1 tablespoon butter, melted
1 tablespoon flour
1/4 cup cream, optional
Black pepper to taste

Instructions;
Add a bit of oil to Instant pot. Sauté chicken for 5 minutes. Add carrots, celery, potatoes, peas, broth and spices. Make sure liquid covers the ingredients. Do not add butter and flour at this time. Close lid and pressure cook 25 minutes on high. Let stand for at least 20 minutes. Release pressure. Mix melted butter and flour until well mixed and add to stew. Add cream, black pepper and more salt if needed. Serve hot.
