Almond Milk

Makes about 4 cups
It's great in tea, coffee, as a drink or add chocolate for almond chocolate milk.

Almond Milk and Almond Spreads


Ingredients 
1 cup of almonds
Water to cover nuts
 3-4 cups fresh filtered water

Reusable nut milk bag
Clean bottle, sanitized

Instructions 
Rinse almonds well. Place almonds in large bowl, cover with filtered water. Soak almonds overnight.

Discard water and rinse almonds just a bit. Return to mixing bowl, add fresh filtered water, or best water you have on hand. I boil my tap water in the kettle.

With a hand mixer beat the almonds, you'll see the water change to milk right away.  Beat until almonds turn to a pulp, about one minute.

Strain the milk through a nut milk bag. Squeeze, squeeze and squeeze the bag to get all the milk out. Place the nut bag contents aside.

Pour milk in a bottle that you have just rinsed with boiling water to partially sanitize. The milk will last 4 days. 

Hints
You can make oats milk or any nuts the same way. Cashew milk is really good.


Ways to use almond pulp
Turn the nut bag inside out to empty it. Save the pulp. Refrigerate or freeze the pulp.
You can use almond pulp in cakes, pies, smoothies, ice cream. It's great in salad dressing or any dish with coco milk, like curried chicken. Make Almond Pulp Spread, see idea below. Almond pulp adds a nice taste and extra protein to your meal. 

Almond Pulp Spread
Mix almond pulp with cinnamon, cocoa powder, powdered carob and honey.
Store in jars and use it on toast, smoothies or breakfast cereal.

Irene's breakfast cereal mix
Soak chia seeds and muesli or plain oats overnight in Almond Milk. In the morning add more Almond Milk, Almond Pulp Spread and berries or chopped fruit.
You aren't hungry all day.
