Quinoa Meal in a Pot

Yummy, one dish meal.

Plate with quinoa, garlic, tomatoes and feta cheese.
Quinoa Meal in a Pot


Ingredients
1/2 cup quinoa
1 eggplant, sliced, use salt method to remove bitterness, then dice
1/4 cup red onion, diced
2 tomatoes, diced
1 cloves garlic, cut in half
1 cinnamon stick
Spices, such as 1/2 tsp cumin and 1/2 tsp oregano, depending on taste
1 1/2 cup of water
1/4 to 1/2 cup Feta cheese
High quality extra virgin olive oil, optional

Instructions 
See below for the eggplant salt method to take out the bitternes. 
In a medium pot add quinoa, eggplant, red onion, tomatoes, garlic, cinnamon stick, and any spices you like. No salt is needed, the feta is salty.  Add water. Bring to a boil, lower heat, cover and simmer for 15 to 20 minutes. Stir. Add fetta on top, do not stir feta into ingredients. Cook another 5 minutes
To serve, drizzle a bit of high quality olive oil on the plate before adding quinoa.

Salt method to remove bitterness:
Thirty minutes before cooking eggplant. Peel and slice eggplant.  Place eggplant in a glass bowl. Sprinkle eggplant pieces with salt, add water and let them sit for about 30 minutes. Liquid will turn brownish. Rinse salt from eggplant and dice slices before cooking.
