Raw Beet Hummus

Makes approximately 1 cup
Delicious and quick hummus.

Raw beet hummus in a bowl before being pureed.
Raw Beet Hummus before using the blender
Ingredients
1 medium beet, about the size of an regular orange, peeled and grated
1 medium golden apple, or any mild flavoured apple, peeled, seeded and grated
1 tsp fresh lemon zest, grated
Juice of 1/2 lemon
Juice of 1/2 lime
Dash of Cayenne pepper
2 tsps tahini
1/2 cup chickpeas
2 tsps or more olive oil
2 tbsp fresh mint

Tomme cheese, grated

Instructions 
Place grated beet, grated apple, lemon zest, lemon juice, lime juice, Cayenne pepper, chickpeas, tahini, olive oil and mint in blender and puree. 

Serve in small dish decorated with a mint leave and grated Tomme cheese.
Great with bread or vegetables. 

Hint:
Omit tahini and chickpeas for a great dip.
Use a firm fresh beet. 
Substitute Tomme cheese for Havarti or young gouda.
No blender, omit chickpeas, mix and serve dip. 
Grated beet and grated apple in a bowl. Half a lemon and lime on the side.
