Ginger Cookies

Makes 48 cookies

Ingredients
1 1/2 cups salted butter, at room temperature
1 1/2 cups dark brown sugar, packed
1/2 cup white sugar
1/2 cup molasses
2 large eggs
4 1/2 to 5 cups all purpose flour (4.8 seems to work well for me)
4 tsp baking soda
2 1/2 tablespoons ground ginger (plus some to taste)
1 tablespoon cinnamon (plus some to taste)
1 tsp ground clove (you get the gist)
1/8 tsp nutmeg
1 tsp salt

Instructions
Cream together butter and sugar then mix in molasses and eggs. In a separate bowl combine dry ingredients and mix into wet.  
Freeze dough for 1 hour.
Roll dough into 1” diameter balls, coat in white sugar, and flatten slightly.  Chill uncooked cookies. 
Bake at 180 °C (350F) for 8 to 10 minutes until cracks start to show (typically on the longer side). 
Remove and cool for 4 to 5 minutes as cracks continue to develop.
