Greek Style Potatoes

Serves 3-4 servings, Makes single 9” x 13” tray.
Recipe can easily be doubled.

Ingredients
5 cups potatoes, cut in ¾ inch cubes
½ cup olive oil
4 cloves garlic minced
1 ½ tsp dried oregano
1 tsp salt
1 tsp pepper
½ cup broth
1/3 cup lemon juice

Instructions
Preheat oven to 200 °C (400 F). Fill a 9" x13" pan with a single layer of potato cubes and mix in olive oil, garlic, oregano, salt, and pepper. Bake for 15 minutes. Add broth, stir potatoes and bake for 10 additional minutes. Add lemon juice, stir potatoes and bake for a further 15 minutes or until potatoes are soft. Optional, once cooked, broil potatoes for a few minutes to develop some colour.
