Gingerbread Pumpkin Cookies

Makes 24 cookies

Two ingredients gingerbread cookies that taste like cake. I think they would make awesome little muffins with nuts added and cream cheese icing.

Gingerbread Pumpkin Cookies

Ingredients 

1 box Spice or Gingerbread cake mix, 375-425g 

1 540 ml can pumpkin only, do not use a pumpkin pie filling. You may only use only a portion of the can of pumpkin.


Instructions 

Preheat oven to 350F.

Put cake mix in a large bowl. Add 1 1/2 cups pumpkin to cake mix. Stir to make a batter. Add more pumpkin if batter is too dry. 

Drop by spoonful on a parchment lined cookie sheet.

Bake at 350 degrees for about 15 minutes.
