Pineapple Coffee Cake

Delicious and easy coffee cake with crushed pineapples.

Pineapple Coffee Cake


Ingredients
1/4 lb butter or margarine, approximately 1/2 cup
1 cup sugar
2 cups flour
2 tsp baking powder
1 egg
A bit less than 1 cup milk
15 ounces crushed pineapple, well-drained

Topping
1 cup flour
1 cup brown sugar
1/4 lb butter or margarine, approximately 1/2 cup

Instructions
Preheat oven to 350F. Grease 9" x 13" cake pan.
In large bowl cream sugar and butter or margarine.
Mix flour and baking powder in small bowl.  In a glass measuring cup, add egg, beat egg lightly, then add milk to make one cup. 
Add some flour to creamed mixture alternately with egg and milk mixture. 
Spread cake mixture in 9" x 13" cake pan.
Cover mixture with well-drained crushed pineapple.
Topping: In small bowl mix topping ingredients until crumbly. Sprinkle over pineapple.
Bake at 350° for 1 hour or until toothpick inserted in cake comes out clean.
