Orange Chocolate Loaf |
Ingredients
1 1/4 cups flour
2 tsp baking powder
1/4 tsp salt
1/2 cup cocoa
1 cup sugar
1 cup 35% whipping cream
1 tsp vanilla extract
2 large eggs
1 to 2 tablespoons grated orange peel zest
Glaze ingredients
1/3 cup orange juice
3 tablespoons sugar
Instructions
Preheat oven at 350 F. Line 9" x 5" bread or loaf pan with parchment paper and grease.
In medium bowl add flour, baking powder, salt, cocoa, and sugar, mix well and set aside. Sifting dry ingredients is suggested.
In small mixer bowl, add whipping cream and vanilla. Beat until cream is stiff and holds its shape. Add eggs one at a time and mix on low speed. Scrape bowl as required. Transfer to large mixing bowl. Slowly mix in dry ingredients in three stages. As soon as ingredients are mixed, stir in orange peel zest by hand. Pour into prepared loaf pan, even out the top with spatula. Bake for 50 to 60 minutes at 350F until toothpick inserted in middle comes out clean. Meanwhile mix glaze ingredients and let sit at room temperature.
When loaf is done, remove from oven, let sit for 5 minutes and then slowly brush glaze on top of loaf and the sides. Let cool on baking rack. Remove from pan and serve.
Variation:
Top loaf with icing instead of glaze.
