Ray's Pizza Dough

Makes 5 to 8, 15-inch pizza crusts
Recipe is for dough, add sauce, toppings and cheese of your choice.

Ray's Pizza Dough

Ingredients 
6 cups all-purpose flour
3 tsp salt
6 tablespoons olive oil
2 2/3 cups warm water
2 tablespoons granulated sugar
5 1/2 tsp or 3 pkg active dry yeast

Instructions 
In a small glass bowl, add 2 1/3 cup warm water, 100F degrees water. Add sugar and stir. Sprinkle yeast on top, let sit 5 to 10 minutes. Yeast willl foam if it’s good.

Meanwhile, mix all dry ingredients in extra large bowl. Make a well in centre of flour mixture, add yeast mixture, olive oil. Use a spatula to mix the dough, from side to center. Cover bowl with towel or glass plate and let rest 15 minutes. Cut dough in 5 or 8 sections depending on desired crust thickness. Roll dough on floured board to make pizza crust. You can cook all the crust differently. Proceed with recipe.

To freeze crust. Preheat oven to 425F. Roll dough on floured surface to 15" Place dough in pizza pan or stone,  and pierce with a fork. and bake in oven for 5 min at 425F. Freeze and use when needed.

When ready thaw crust for pizza. Preheat oven to 425F. Top with sauce, topping and cheese. Bake in a preheated 425 F oven. Bake until crust is lightly brown underneath, approximately 20 minutes or more.

Tip: Ray uses Robin Hood or  King Arthur flour.
