Meatless Baked Beans

Serves 12
Easy recipe that has no meat and cooked in instant pot but you can cook them in the oven or crockpot... just longer. I enjoy these as a meal, side dish or with eggs for breakfast.

Meatless Baked Beans


Ingredients 
8 cups of Navy beans, soaked overnight 
1 large onion, finely chopped
2 tsp salt
1 tsp turmeric (optional for colour)
6 tablespoons cider vinegar
2 tsp brown sugar
1 tsp powdered mustard
1/2 cup molasses 
2 tablespoons tomato paste
Black pepper
2 tablespoons olive oil

Instructions 
Rinse and soak beans overnight in bowl with 2 inches of water covering beans. Rinse well.
Add beans in instant pot. Add ingredients in order listed. Give a quick stir.
Add water to cover. (not too much)

Cook in instant pot for 75 min on stew setting. Then leave on Warm or rest setting for 70 minute. Steam release if needed.

Alternate instructions
Cooking in oven. Add about 1 inch water over the beans. Bake at 250F for 6 to 8 hours.
 
Frezes well. Freeze in meal size portions and use as side dishes.
