Ingredients
1 tbsp. olive oil, use extra virgin oil
28-oz can diced plum tomatoes in juice
1/2 cup fresh parsley
Salt and ground pepper, to taste
Instructions
Heat oil in saucepan. Add tomatoes and cook over medium-high heat until some of the juice is reduced. Add chopped parsley and seasonings; serve over cooked spaghetti.
Variations: Add crushed garlic, your favorite spice or favorite fresh herbs.
