Makes two loaves
3 cups flour
1 cup oil
1 1/2 cups sugar
2 tsp. vanilla
2 cups zucchini, shredded
1 cup chopped walnuts
1 cup raisins
Instructions
Grease and flour two loaf pans. Preheat oven to 375F.
Mix first five ingredients in large bowl.
In other bowl mix eggs, oil, sugar, vanilla and zucchini. Add egg mixture, walnuts and raisins to dry ingredients in large bowl. Mix and put in two loaf pans. Bake at 375F for 1 hour.

Variation: 1 cup of sugar, 2 1/2 cup of shredded zucchini and 1 apple shredded. It's delicious.
