Ingredients
1/2 cup butter, halved2 medium onions, sliced or chopped
2 cups white rice
1/2 pound mushrooms, sliced
1/8 tsp pepper
4 cups chicken broth
1 tsp salt
2 cups egg noodles
Instructions
Preheat oven to 350F.
In frying pan add 1/4 cup of butter, cook onions on medium heat until tender.
Add rice, mushrooms and pepper. Cook 5 minutes stirring frequently.
Pour broth into casserole. Add rice mixture, 1/4 cup of butter and salt. Gently stir in noodles.
Cover and bake 35 to 40 minutes until rice and noodles are tender and all liquid is absorbed.
Before serving, fluff rice with fork, Makes 12 servings.
Gil's notes:
I always make half of this recipe, without the noodles. Use a tight fitting lid. I cook it in a creuset and let it rest 5 min, then stir. I don't remember which Lynn gave me this recipes, I've had it for ions. It is a bit more work then throwing rice in a cooker, but it is so tasty. I like the 40 min that I don't watch it so I can prepare the rest of my dinner.
