Blackened Mahi Mahi

Make your own blackened spice mix to control how spicy you want your fish. When you are traveling and cooking sometimes you have to change ingredients with what is available locally. If fish is frozen, thaw completely before cooking.

Blackened Mahi Mahi

Ingredients 
2 fresh mahi mahi filets,  4-6 ounces each
1 tablespoon butter
1/2 tablespoon olive oil
Two lemon slices

Fish Spice Mix
1/8 tsp red cayenne pepper or to taste
1/4 tsp black pepper
1/4 tsp salt or to taste
1/2 tsp dried oregano leaves
1/2 tsp parsley leaves
1/2 tsp Old Bay Spice 

Instructions
Combine Fish Spice Mix ingredients in a small bowl.
Pat Mahi Mahi filets dry with paper towels. Season the filets liberally with Fish Spice Mix on both sides, pressing the seasoning into the fish with your hands. Wash hands thoroughly.

Preheat butter and oil in a medium to large saute pan over medium heat. The fish pieces need space between fillets, select pan accordingto fish size. When the butter starts sizzling and pan is hot, add the seasoned fish. Cook undisturbed for several minutes and until fish is golden brown on one side. Flip fish over. Continue to cook until fish is opaque. Remove from heat and let fish completely cook through. Return to heat if fish does not flake easily after a couple of minutes.

Squeeze lemon juice over the fish and serve.

1/8 tsp red cayenne pepper or to taste
1/4 tsp black pepper
1/4 tsp salt or to taste
1/2 tsp dried thyme leaves
1/2 tsp dried oregano leaves
3/4 tsp onion powder
1/2 tsp garlic powder
1/2 tsp smoked paprika
