Makes 3 dozens
Easy and delicious if you like coconut. You can also add finely chopped nuts.

Ingredients
1 cup shortening, margarine or softened butter
1 cup granulated sugar
1 cup packed brown sugar
2 large eggs
1 tsp vanilla extract
2 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 cup quick oatmeal
1 cup sweetened shredded coconut
Directions
In mixing bowl add shortening, margarine or butter and beat until soft. Add granulated and brown sugar and beat until blended.
Add eggs and vanilla and blend in. In small bowl add flour, baking powder, baking soda and salt and stir. Gradually add flour mixture to mixing bowl and beat until mixed well. Stir in oats and coconut.
Preheat oven to 350°. Drop 1 tsp cookie batter on ungreased baking sheet 2" apart. Bake 10 to12 minutes or until golden brown. Cool on baking pans 5 minutes. Remove cookies to wire racks with spatula and cool completely. Store in air tight container.
Options
Add finely 1/2 cup chopped nuts or sliced almonds at same time as coconut.
