This refreshing salad is a perfect accompaniment for your summer barbecues, lunches or potlucks.
Beet, Feta and Parsley Salad |
Ingredients
6 beets, cooked, peeled and cut into small cubes
1/2 cup feta cheese in small cubes
2 tablespoons fresh parsley, chopped
1/2 red onion, sliced into thin strips
Vinaigrette
3 tablespoons olive oil
2 tablespoons wine vinegar
1/2 tsp Dijon mustard
Fresh ground black pepper to taste
Instructions
Mix the vinaigrette ingredients in a small bowl.
Gently mix salad ingredients and vinaigrette in a large bowl.
Cool for 30 minutes before serving.
