Raspberry Vinaigrette

Makes approximately 2 cups
Oil free vinaigrette made in blender.

Ingredients
1 cup raspberries, fresh or frozen 
1/2 cup water, approximately 
1/4 cup apple cider vinegar or red wine vinegar, approximately 
2 tablespoons maple syrup, approximately 
1 tsp Dijon mustard, optional
Salt and pepper to taste

Optional thickener: 1 tablespoon ground flaxseed meal mixed with 3 tablespoons water, allowed to sit for 5 to 10 minutes to form a gel.

Instructions 
Thaw raspberries if frozen. In blender, add and combine raspberries, water, vinegar, maple syrup, mustard, salt, and pepper. Blend until mixture is completely liquid smooth.
Add optional additional thickener. Blend until mixed.
Taste dressing and adjust by adding more water, and/ or vinegar and/ or maple syrup. 
Strain with a fine mesh strainer, optional.
Store in jar in refrigerator up to 5 days.
