This is a soup is made in a heated blender. It's delicious!

Ingredients
1 tablespoon olive oil
1/2 onion, cut in quarters
3 cups carrots, sliced
2 tablespoon fresh ginger, peeled and cut
3 garlic cloves
4 cups vegetable broth
1 tablespoon apple cider vinegar
1/2 tsp turmeric powder, optional
Toppings, optional: Serve with cashews, cream, goat cheese, seeds and/or fresh herbs.
Instructions
Add ingredients in blender in order listed.
Use soup setting to heat soup.
When ready to eat, serve with optional toppings. Makes 3 bowls.
Tip: Warm leftover soup in individual portions in the oven with a dollop of goat cheese.
