Chocolate Wafer Cookies

Makes 30 to 36 cookies
For dairy free cookies, use dairy free chocolate wafers.

Ingredients
2 1/2 cups flour
1 tsp baking soda
1/2 tsp salt

1 cup white sugar
1 cup dark or light brown sugar
1 cup sunflower oil or vegetable oil 
2 eggs
1 1/2 tsp vanilla 

2 handfuls, approximately 1 cup chocolate wafers, cut into chunks

Instructions
Preheat oven to 350F degrees 
Stir flour, baking soda and salt in a small bowl and set aside.
In a large mixing bowl add brown sugar, white sugars and oil. Cream until mixed. Add eggs, one at a time and beat after each egg. Beat in vanilla.
Stir in flour mixture a bit at a time until dough is well blended.
Stir in chocolate wafer chunks until mixed.
Drop dough by spoonful on ungreased cookie sheets. 
Bake at 350F degrees for 10 minutes or more, depending on cookie size. 
Cool for 10 minutes on a rack before removing from cookie sheet.
Makes 3 dozen cookies, depending on cookie size. Freezes well. 

Substitutions
Substitute sunflower oil or vegetable oil with canola oil. Do not use olive oil for this recipe.
Substitute chocolate wafer chunks with 3/4 to 1 cup of chocolate chips.
